2025 Pierre Antonin Petit Sauvage Blanc

Souvignier Gris is a pioneering disease-resistant grape variety, born from a natural cross between a classic European Vitis Vinifera — prized for its winemaking qualities — and the hardy American Vitis Rupestris, which offers natural resistance to powdery and downy mildew. The result is a vine that requires up to 15 times fewer treatments than conventional organic farming, dramatically reducing energy use, water consumption, and labour. It means a significantly lower carbon footprint — and a wine grown with a genuine commitment to the land.

Harvested at full maturity, Souvignier Gris is cold pressed immediately to preserve the freshness and aromatic brilliance of the fruit. Fermentation is carried out exclusively by indigenous yeasts, without any additives or sulphites, ensuring a pure and authentic expression of the grape variety. After four months of aging on fine lees in stainless steel vats, the wine is bottled. The finish is mineral and full of pep.

Pairing Suggestions: Fresh goat cheese and honey salad, asparagus risotto, grilled fish with lemon, or even a Filet-O-Fish.

Tasting Note: The expressive nose reveals aromas of Granny Smith apple and white flowers. On the palate, the texture is crisp and refreshing, offering beautiful tension and notes of apricot and nectarine.
