Nicolas Cheveau is one of Caviste's favourite producers. His style is one of elegance and restraint, and his wines show both finesse and concentration. His vineyards cover Pouilly and Mâcon with a few hectares of St Véran and even Beaujolais Villages. He is one of the most meticulous wine makers we have met and to be in the vineyards around the Roche de Solutré is an object lesson in allowing terroir to speak and man to keep quiet. The 2011 vintage is one of the finest we have seen of this wine, with hazelnut butter, melon, and fennel notes all mingling in a rich, but still refreshing palate. 13%

Caviste

Domaine Michel Cheveau is a 14 hectare family estate run by Nicolas Cheveau, his brother Julien and wife Aurelie. The family cellars are on the outskirts of the village of Fuissé. The vines are located in an around the village, with 14 hectares covering St Veran, Macon, Fuisse, Solutre Davaye and 1er Ouilly Fuisse (Buchot Vers Cras Pouilly and Aux Bouthiers). They are worked by hand, by horse and by tractor, and without use of any agrochemicals. Cheveau is one of the few vingnerons who do not fertilize either, choosing to use sward management to stop soil erosion and keep a balance of nutrients in the soil.
