MV Hattingley Entice Dessert Wine
The question is "how do you make dessert wine in England and the very short answer is, ‘With difficulty’.
This multi-vintage blend really is a labour of love for the team at Hattingley.
Bacchus grapes were artificially frozen to -18C for four weeks, before being slowly pressed over a period of 16 hours, harvesting the sweetest of juice. To add complexity to the finished wine, reserve wine from 2022 & 2023 was blended in to add complexity and development.
The perfect accompaniment to a perfectly ripe Tunworth cheese.
Tasting Note: Vibrant gold in colour, the latest edition of this unique dessert wine is full of indulgent aromas of white flowers and citrus, underpinned by gloriously fragrant notes of honeysuckle. The palate promises more of the same but is enhanced further by the sweetest of elderflower and fresh manuka honey. Much fuller in body than previous iterations, with a texture reminiscent of lemon curd. The balancing acidity offered by perfect Bacchus grapes provides crisp acidity and a lingering and playful finish.
