The grapes come from 2 separate regions of Champagne and Burgundy. They are hand-harvested and gently whole-cluster pressed to produce a clean, pale juice while limiting phenolic extraction. The juice is divided between tanks (70%) and barrels (30%) for fermentation. There is no chaptalization, and the wine undergoes malolactic fermentation. The two lots are then blended to balance freshness and structure, fruit and complexity.

For the second fermentation, organic yeast is added and the wine is bottled under crown cap. It spends 6–12 months on the lees, retaining its freshness while developing notes of brioche and toast. After disgorgement, only wine is added, with zero dosage.

Tasting Note: A floral and mineral nose. Notes of citrus, apricot, and quince. A refreshing wine that is easy to drink. This sparkling wine is perfect for every occasions. Serve it anytime to delight and awaken the taste buds.

Vincent Couche

Vincent Couche has guided his family estate towards a more sustainable future, combining a respect for the environment with a commitment to quality. In 2008, he began converting all the estate’s vineyards to biodynamic viticulture, an approach reflected in his careful, artisanal work in both vineyard and cellar.

The estate’s story began with Vincent’s father, André Couche. In 1973, André acquired Buxeuil’s largest Pinot Noir vineyard, along with a Chardonnay plot in Montgueux.
