This is very much a wine for Pinot Noir aficionados who are looking for a bit more grip and complexity.
From a single vineyard leased from the McFall family where the grapes are fermented under 100% natural yeast in whole bunches gaining colour, complexity and tannin from the skins and stalks.
Hand harvesting, 100% whole bunch fermented | 100% wild yeast primary fermentation | 20 days total on skins | Natural malolactic fermentation in barrel
100% French oak maturation, 25% new | 17 months in wood with 1 racking | No fining and no filtration
Tasting Note: Possessing deeper, more intense and spicier characteristics than a traditional Pinot, the wine blossoms two hours after decanting. On tasting, the wine exhibits tangy and red fruit flavours, accompanied by savoury, herbal and earthen notes, bound together by firm, delicate tannins and invigorating acidity.
