2023 Thorle Saulheimer Spatburgunder
The village wines represent the strictest hand-selection during harvesting and are grown in the top, limestone-rich vineyards in Saulheim. Yields are very low, at approximately 40 to 50 hl/ha.
The grapes were harvested by hand at an optimal balance of aroma, acidity, and ripeness. The harvest time is particularly crucial for Pinot Noir. This extract-rich Pinot Noir, spontaneously fermented on the skins for over 20 days, was then aged for 18 months in high-quality French barriques (1/4 new and 3/4 older).
Tasting Note: On the nose, a hint of violets and intense aromas of wild forest berries and morello cherries, subtly underpinned by a fine wood spice. On the palate, a touch of herbal mint, fresh acidity, and an endlessly long, saline-mineral finish.
