2023 Pinot Noir de Cassagnau 'La Chapelle'

Domaine de Cassagnau sources its grapes from well exposed gravelly terraces where Pyrenean breezes meet Mediterranean warmth. “La Chapelle” is vinified with daily punch downs and both alcoholic and malolactic fermentations under 25 °C, followed by gentle vat ageing. The result is a wine that stands out for its bright cherry aromas and elegant spice notes.

Winemaking: After destemming and crushing, fermentation is temperature controlled below 25 °C with daily punch downs for moderate extraction. Malolactic conversion follows, then several months’ ageing in stainless vats before bottling.

Pairing Suggestions: Perfect with roasted duck breast, mushroom risotto or a simple platter of cured meats and Manchego cheese for a vegetarian option.

Tasting Note: Lovely ruby with purple hints, bursting with red fruit aromas of cherry and redcurrant layered over a subtle garrigue edge. The palate is silky yet fresh, framed by gentle tannins and sweet spice leading to a long, poised finish.
