A primary maturation in ex-bourbon casks has softened the whisky and allowed Spirit of Yorkshire's signature flavour profile to develop while a secondary maturation, the finish, in Shaved, Toasted and Re-charred ex-red wine casks has brought a wonderful deep colour and delicious red fruit flavours to the whisky.
